🌿 Why You’ll Love This Recipe

  • No refined sugar
  • Naturally sweetened with dates
  • Rich in iron, fiber & healthy fats
  • Perfect for festive platters or everyday snacking
  • Kid-friendly & travel-friendly

INGREDIENTS

  • 16 pieces organic dates, pitted and roughly chopped
  • 1/4 cups raw almonds, roughly chopped
  • 1/4 cups pistachios, roughly chopped
  • 1/4 cups walnuts, roughly chopped
  • 3 tablespoons sesame seeds
  • 1 tablespoons ghee (clarified butter)

STEPS

1. Prep and Toast the Crunch

Start by roughly chopping your almonds, pistachios, and walnuts. Place them in a dry pan over medium heat. Toast them for 3–5 minutes until they smell nutty and look golden. Remove and set aside. In the same pan, quickly toast the sesame seeds for about 1 minute until they begin to pop. Set these aside in a separate small bowl.

2. Soften the “Caramel”

If your dates have pits, remove them now and chop the fruit into small pieces. In your pan, heat the ghee over low-medium heat. Add the chopped dates. Stir and press down with a spatula for about 1–2 minutes. As the dates heat up, they will become mushy and start to clump together into a soft, sticky dough.

3. Combine

Turn the heat to low. Fold your roasted nuts into the date mixture. Mix well for about a minute until the nuts are evenly distributed and the “dough” holds its shape.

4. Shape the Log

Lay out a piece of parchment paper. Transfer the warm mixture onto the paper. Carefully (it will be warm!) shape it into a long, even log.

5. The Finishing Touch

Sprinkle your toasted sesame seeds across the parchment paper. Roll the date log back and forth over the seeds, pressing gently so they adhere and form a beautiful, crunchy outer crust.

6. Chill and Slice

Let the log cool completely at room temperature, or pop it in the fridge for 20 minutes if you’re in a hurry. Once firm, use a sharp knife to slice the log into half-inch discs.

NOTES
Choosing the best dates: Medjool dates are the gold standard here — they’re plump, naturally caramel-sweet, and become incredibly silky when cooked. Deglet Noor dates also work well. Avoid very dry or old dates as they won’t bind as easily.

Nut variations: Feel free to swap in cashews, pecans, or even macadamia nuts. A small handful of pumpkin seeds adds a lovely crunch too.

Make it vegan: Simply skip the ghee or substitute with coconut oil — it adds a subtle tropical note that pairs beautifully with dates.

Storage: The roll keeps well in the fridge for up to 2 weeks wrapped in parchment or an airtight container. It also freezes beautifully for up to 3 months — just slice before freezing for easy grab-and-go portions.

Add a flavour twist: A pinch of cardamom powder or a few strands of saffron stirred into the dates while cooking transforms this into a festive mithai-style treat.

Pro Tip: If your dates feel a bit dry or tough, soak them in warm water for 5 minutes and pat them dry before chopping. This ensures your “dough” is perfectly soft and pliable!
