Ritz Cracker Samosa Bites – perfect as a snack, party appetizer, or quick bite. You can adjust the filling based on your taste or what you have on hand.

Ingredients:
For the Potato Samosa Filling:
- 2 medium potatoes, boiled, peeled, and mashed
- 1 tbsp oil or ghee
- 1 tsp cumin seeds
- 1 small onion, finely chopped
- 1 green chili, finely chopped (optional)
- 1 tsp ginger-garlic paste
- ½ tsp turmeric
- ½ tsp garam masala
- ½ tsp coriander powder
- ½ tsp red chili powder (adjust to taste)
- Salt to taste
- 1–2 tbsp chopped fresh cilantro
- Juice of ½ lemon or a dash of amchur (dry mango powder) for tang
For the Assembly:
- 48 Ritz crackers
- sev (crispy lentil noodles)
- Optional garnish: cilantro, tamarind chutney, mint chutney, or yogurt for dipping
Instructions:
1. Prepare the Filling:
- Heat oil in a pan over medium heat. Add cumin seeds and let them sizzle.
- Add chopped onion and sauté until soft and translucent.
- Stir in green chili and ginger-garlic paste. Cook for 1–2 minutes until fragrant.
- Add turmeric, garam masala, coriander powder, and red chili powder. Cook briefly.
- Add mashed potatoes and mix well, ensuring the spices are evenly distributed.
- Season with salt and finish with lemon juice or amchur and chopped cilantro. Let cool slightly.
2. Assemble the Bites:
- Lay out 24 Ritz crackers on a tray.
- Spoon a small amount (1–2 tsp) of the samosa filling onto each cracker.
- press a second cracker on top to form a sandwich bite
3. Serve:
- Serve immediately for crisp crackers,
- serve with a dipping into sev such that sev sticks to potato filling.
