Rava no Shiro, also known as Sooji Halwa or Rava Sheera, Rava no Shiro is a traditional Indian dessert made from semolina, ghee, sugar, and milk. It’s commonly prepared during festivals and special occasions. Here’s a simple recipe to make this delicious treat

Ingredients:

  • 1 cup semolina (Sooji Coarse)​
  • ¾ cup sugar
  • ¾ cup ghee (clarified butter)​
  • 3 cups milk​
  • 2 teaspoons golden raisins (for garnish)​
  • 2 teaspoons sliced almonds (for garnish)​
  • 1 pinch saffron strands (optional, for color and aroma)
  • 1 teaspoon cardamom powder​

Instructions:

  1. Roast the Semolina: In a heavy-bottomed pan, heat the ghee over medium-low heat. Add the semolina and roast it, stirring continuously, until it turns light golden and releases a pleasant aroma. This should take about 20 minutes.​
  2. Prepare the Milk: While roasting the semolina, heat the milk in another pan. Once it comes to a boil, add the saffron strands (if using) and let it simmer for 5-7 minutes. The milk quantity should reduce slightly during this time.​
  3. Combine Semolina and Milk: Carefully add the hot milk to the roasted semolina, stirring continuously to prevent lumps. Be cautious, as the mixture may splatter.​
  4. Add Sugar: Once the milk is absorbed, add the sugar in two batches, stirring well after each addition. Continue to cook on medium heat until the mixture thickens and starts to leave the sides of the pan.​
  5. Incorporate Nuts and Cardamom: Add the cardamom powder and half of the sliced almonds and raisins. Mix well. Reserve the remaining nuts for garnishing.​
  6. Serve: Transfer the Shiro to serving plates, garnish with the remaining almonds and raisins, and serve hot.
