Masala Makhana, also known as spiced fox nuts or roasted lotus seeds, is a popular Indian snack cherished for its crunch and nutritional benefits. Here’s a simple recipe to prepare this delightful treat:


Ingredients:
- 200g/7 oz phool makhana (fox nuts or lotus seeds)
- 1 tsbp ghee (clarified butter)
- 2 tbsp Oil
- 1 tbsp Turmeric
- 2 tsp Kashmiri red chili powder
- 1 tsp Black Salt
- 1 tsp Chaat Masala
- 1 tsp Cumin powder
- 1 tsp Coriander Powder
- 1 tsp Garam Masala
- 1 tsp Black Pepper powder
- 1 tsp Garlic Powder
- 1 tsp Amchur Powder
- 1 teaspoon salt (adjust to taste)
Instructions:
- Roasting the Makhana:
- In a large pan or kadai, heat 1 tablespoon of ghee over medium heat.
- Add the phool makhana to the pan.
- Roast them on low to medium flame for atleast 20-25 minutes, stirring occasionally, until they turn crunchy. You can press makhana and if its breaks easily they are ready
- Spicing the Makhana:
- Once roasted, off the heat. And keep Makahna in different plate
- In same pan that you roasted Makhana, Add Oil and all the masalas
- Add Roasted Makhana to oil
- Mix well, ensuring all the makhana are evenly coated with the spices.
- Serving:
- Allow the masala makhana to cool to room temperature.
- Store in an airtight container.
