Quinoa is ONE of the SUPERRRR food with sooo many health benefits. Quinoa is a complete protein, with about 8 grams per cup. It is Gluten free, high in dietary fiber, antioxidant, a good source of minerals such as iron, magnesium, potassium, and zinc, which are essential for maintaining healthy blood cells, high source of manganese, Vitamin E and antioxidant. And the list goes on.
How ideal it would be if we can incorporate this AAMAZZINGGG Superfood in our diets in a tasty way! I have a quick recipe for it! check out below
Today we are going to make Masala quinoa.

Ingredients
1 cup – Quinoa
1 onion
1 tomato
1 cucumber
1 carrot
½ cup Peanuts
Curry leaves
Masalas
1tsp turmeric,
1tsp red chili powder
1tsp cumin coriander powder (dhana jeeru)
1tsp garam masala
1tsp Sambar masala powder
1tbsp – oil
1tsp – mustard seeds
1tsp – urad daal
1tsp Lemon juice
Pinch of hing
Salt to taste
Masalas for Kachumber:
Salt,
Black pepper
Chaat masala
Cumin powder
Black salt
Lemon juice
1tsp olive oil
Recipe:
Step 1 : Cook Quinoa
In Instant pot to 1 cup Quinoa add 1.25 cups of water. Pressure cook for 1 minute and NPR
Note: If you are taking 2 cups quinoa pressure cook for 2 minutes.
Step 2 : Chopping
- Finely chop Cucumber, tomatoes and Carrot and onion.
Step 3 : Make Kachumber (Indian Salad)
- In a bowl Mix all the above finely chopped veggies. Add only half of onion in this leave rest (we will be using this in next step)
Step 4: Roast Peanuts
- In a pan heat oil, Add peanuts and roast well for 2-3 minutes on low flame.
Step 5: Saute
- Once peanuts are roasted add Mustard seeds and Urad Daal.
- Once splatter add a pinch of hing
- Next add curry leaves
- Add remaining finely chopped onions and let it cook until.
Step 6 : Fluff the quinoa
- Meanwhile quinoa should be done. Open instant pot after NPR and fluff the quinoa with fork.
Step 7: Masalas:
- Add all the masalas – turmeric powder, red chili powder, coriander-cumin powder, salt, and garam masala. Mix and let it cook on low flame until little fragrant.
Step 8: Add Quinoa
- Finally add cooked quinoa to the onion mix. And combine well.
Step 9: Seasonings
- Lastly, adjust seasoning of salt or red chili if you want. Secret Ingredient here is a tsp of Sambar Masala !. Squeeze some lime juice. And mix well.
Step 10: Serve!!!
Serve masala quinoa in a bowl and top it of with lots of Kachumber! and ENJOY…!!!
