Peanut Sauce linguine Pasta

Happy New Year to all my Readers. Wishing everyone a healthy fun filled year ahead. Wishing 2023 I could create and share more recipes with you all.! Posting my Very first recipe of 2023. This is one of my own creation and definitely kid approved recipe😊. This is a quick week night meal with just few ingredients. Peanut butter – star of the dish gives this dish the umami flavor making it a nice hearty comfort food. Eating peanut butter in moderation and as part of an overall healthful diet may provide

Ingredients:

2 Portions – Linguine Pasta

1/4th cup – finely chopped onion

1 tbsp – Peanut butter

1tbsp – Cream cheese

3/4th – 1 cup – Heavy whipping cream

1 big clove – Minced garlic

1tbsp – Amul Plain Cheese spread

½ tbsp – Tomato paste

1 tbsp – Tomato Ketchup

1/4th tsp – freshly grounded black pepper

1/4th tsp Indian pasta seasoning

1 ½ tsp – Avocado oil or any cooking oil

Salt to taste

Italian mix herbs

Indian Pasta masala

Salted butter

Recipe:

  1. Bring a pot of water to boil with added salt and add pasta to cook.
  2. While pasta is cooking finely chop onion and mince the garlic
  3. Heat pan on medium flame and add oil and butter
  4. Than add minced garlic, cook for few seconds until fragrant.
  5. Next add finely chopped onion. Cook for 1-2 minutes, Until softened.
  6. Add about 1/4th cup pasta water
  7. Add Peanut butter and keep stirring to mix well
  8. Add Cream cheese, tomato paste mix until well mixed. If too thick add some pasta water
  9. Now add heavy whipping cream and Amul cheese spread. Mix again for saucy consistency
  10. Add all the seasonings salt, black pepper, Italian mixed herb, chili flakes, ketchup and some chipotle Aioli sauce.  A pinch of sugar to balance all flavors.
  11. Finally add cooked pasta and mix. Finish it with some salted butter. And serve it with warm bread.
