Avocado Hummus Quesadilla

This is one the healthy and quick all in one recipe good for breakfast, light lunch or dinner. Avacado’s are rich in fiber, heart healthy monosaturated fats but also calorie dense food. Great for growing kids ..!

Ingredients

  • Tortilla (any kind you like)
  • Hummus ( any flavor you like) I prefer red bell pepper chili one.
  • Avocado
  • Finely chopped onion (Optional)
  • Finely chopped green bell pepper
  • Finely chopped tomatoes
  • Chili flakes
  • Salt and pepper

Recipe

  1. Warm 2 tortilla on skillet without oil
  2. Once warm, spread some hummus about 1 tbsp on tortilla leaving the edges out.
  3. Than cut some fresh avocado, smash it little in the avocado skin itself and then spread it over hummus, press lightly.
  4. Sprinkle some chopped onion, tomatoes and bell pepper. Salt and pepper and some chili flakes for some flavor.
  5. Cover it another warm tortilla.  Press slightly to make it even
  6. Drizzle some oil in warm skillet and put the quesadilla prepared. Press it light with spatula and let it be little crispy one side. Drizzle some oil on another side then flip over to let it brown and crispy. About a minute on medium flame.
  7. Once well done on both side, take it away from the skillet and cut in four sections.
  8. (Optional) Garnish it with some spring onions, Mexican cheese and a dollop of cream cheese.
  9. Serve it with some salsa or ketchup.
